Get any one wrong and the problem eventually shows on the outside, either as a ridge through the fashion fabric or as an edge that slowly degrades in the wash.

An overlocker solves all three in a single pass. As it stitches, it trims the seam allowance to a consistent width, then wraps that raw edge in a neat thread casing so it cannot fray. The resulting stitch is slightly stretchy, which means it moves with the fabric rather than popping under tension.
